Key Lime Cupcakes with Creamy Lime Frosting

Ingredients (Makes 12 cupcakes):

For the Cupcakes:

• 1½ cups all-purpose flour

• 1 tsp baking powder

• ½ tsp baking soda

• ¼ tsp salt

• ½ cup unsalted butter (room temp)

• ¾ cup sugar

• 2 large eggs

• 1/3 cup fresh key lime juice

• 1 tsp key lime zest

• ¼ cup buttermilk

• 1 tsp vanilla extract

For the Frosting:

• 8 oz cream cheese (softened)

• ½ cup unsalted butter (softened)

• 3 cups powdered sugar

• 2 tbsp key lime juice

• 1 tsp key lime zest

• Optional: a few drops of green food coloring

Instructions:

1. Preheat & Prep: Set oven to 350°F and line a cupcake tin with 12 paper liners.

2. Make the Batter: In a bowl, whisk flour, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in lime juice, zest, vanilla, and buttermilk. Slowly add dry ingredients until smooth.

3. Bake: Scoop batter into liners and bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely.

4. Whip the Frosting: Beat cream cheese and butter until smooth. Slowly add powdered sugar, lime juice, zest, and coloring if desired. Frost cooled cupcakes generously.

5. Garnish & Enjoy: Top with lime zest, graham cracker crumbs, or a small lime slice for flair!

It’s a West Texas twist on a classic favorite—sweet, refreshing strawberries blended with lime, mint, and a kick of jalapeño to keep things exciting.

And whether you’re looking for your first home, your next investment, or a backyard where you can sip something just like this—I’m here to help you find it.

🍓 Spicy Strawberry Agua Fresca

Ingredients (Serves 4–6):

• 1 lb fresh strawberries, hulled

• 1 small jalapeño, seeds removed (use half for mild heat)

• Juice of 2 limes

• 3 tbsp honey or agave

• 3 cups cold water

• Handful of fresh mint leaves

• Pinch of sea salt

• Ice for serving

🧊 Instructions:

1. Blend It Up – Add strawbSheerries, jalapeño, lime juice, honey/agave, mint, salt, and water to a blender. Blend until completely smooth.
