Key Lime Cupcakes with Creamy Lime Frosting
Ingredients (Makes 12 cupcakes):
For the Cupcakes:
1½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter (room temp)
¾ cup sugar
2 large eggs
1/3 cup fresh key lime juice
1 tsp key lime zest
¼ cup buttermilk
1 tsp vanilla extract
For the Frosting:
8 oz cream cheese (softened)
½ cup unsalted butter (softened)
3 cups powdered sugar
2 tbsp key lime juice
1 tsp key lime zest
Optional: a few drops of green food coloring
Instructions:
1. Preheat & Prep: Set oven to 350°F and line a cupcake tin with 12 paper liners.
2. Make the Batter: In a bowl, whisk flour, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in lime juice, zest, vanilla, and buttermilk. Slowly add dry ingredients until smooth.
3. Bake: Scoop batter into liners and bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely.
4. Whip the Frosting: Beat cream cheese and butter until smooth. Slowly add powdered sugar, lime juice, zest, and coloring if desired. Frost cooled cupcakes generously.
5. Garnish & Enjoy: Top with lime zest, graham cracker crumbs, or a small lime slice for flair!
