Spicy Pumpkin Tamale Pie Recipe


Ingredients:


  • For the Filling:

    • 1 pound ground beef or turkey

    • 1 onion, diced

    • 1 can (15 oz) pumpkin purée

    • 1 can (15 oz) black beans, drained and rinsed

    • 1 cup corn kernels (fresh or frozen)

    • 2 cloves garlic, minced

    • 1 tablespoon chili powder

    • 1 teaspoon cumin

    • 1 teaspoon smoked paprika

    • Salt and pepper to taste


  • For the Tamale Topping:

    • 1 cup cornmeal

    • 2 cups chicken broth

    • 1 cup shredded cheddar cheese

    • 1 teaspoon baking powder

    • ¼ cup melted butter

    • 1 teaspoon jalapeño, finely chopped (optional for extra spice)


Directions:


  1. Prepare the Filling: In a large skillet, brown the ground beef or turkey with diced onions until fully cooked. Drain excess fat if necessary. Add minced garlic, pumpkin purée, black beans, corn, chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine and let simmer for 10 minutes.

  2. Make the Tamale Topping: In a medium saucepan, bring chicken broth to a boil. Slowly whisk in the cornmeal, stirring constantly until thickened. Remove from heat and stir in melted butter, baking powder, shredded cheddar cheese, and jalapeño if you like it spicy.

  3. Assemble and Bake: Preheat your oven to 375°F. Pour the filling into a greased 9x13-inch baking dish, then spread the tamale topping evenly over the filling. Bake for 25-30 minutes or until the top is golden brown and firm.

  4. Serve and Enjoy: Garnish with fresh cilantro, a squeeze of lime, or even a dollop of sour cream for a little extra Southwestern flair. This dish pairs perfectly with a side of chips and salsa!
