Hojarascas Cookies Recipe


Ingredients:

    • 1/4 cup vegetable shortening

    • 1 large egg, lightly beaten

    • 1/2 teaspoon baking powder

    • 1/4 teaspoon salt

    • 1 teaspoon ground cinnamon

    • 1 teaspoon vanilla extract

    • 2–3 tablespoons cold water (as needed)


  • For Dusting:


    • Additional granulated sugar or powdered sugar for a light finish


Instructions:


  1. Prepare the Dough:In a large mixing bowl, combine the flour, baking powder, salt, and ground cinnamon. Add the granulated sugar. Cut in the cold butter and shortening using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

  2. Mix Wet Ingredients:In a separate bowl, whisk together the beaten egg, vanilla extract, and cold water. Gradually add this mixture to the dry ingredients, stirring gently until a smooth dough forms. You may need to adjust the water amount to achieve a pliable yet firm dough.

  3. Chill:Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Chilling helps the dough to rest and makes it easier to roll out.

  4. Roll and Cut:Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Cut into your desired shapes—traditionally rectangular or diamond-shaped pieces work well.

  5. Bake:Place the cut dough on the prepared baking sheet and bake for 10–12 minutes or until the edges turn lightly golden. The cookies should remain crisp but tender.

  6. Finish and Serve:Allow the cookies to cool on a wire rack. For an extra touch of sweetness and tradition, lightly dust the cooled cookies with granulated or powdered sugar before serving.
