Recipe: Crispy Fried Catfish with Tangy Homemade Slaw


Ingredients


For the Fried Catfish:


  • 4 fresh catfish fillets

  • 1 cup buttermilk

  • 1 cup cornmeal

  • 1/2 cup all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1/2 tsp cayenne pepper (optional, for spice)

  • Salt and pepper to taste

  • Vegetable oil for frying


For the Homemade Slaw:


  • 4 cups shredded cabbage (green or a mix of green and purple)

  • 1 cup shredded carrots

  • 1/2 cup mayonnaise

  • 2 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste


Instructions


  1. Prepare the Catfish:

    • Rinse the catfish fillets and pat them dry. Soak them in buttermilk for at least 20 minutes to tenderize and flavor the fish.

  2. Make the Slaw:

    • In a large bowl, combine the cabbage and carrots. In a smaller bowl, whisk together mayonnaise, apple cider vinegar, honey, mustard, salt, and pepper. Pour the dressing over the cabbage mixture and toss well. Refrigerate until ready to serve.

  3. Coat the Catfish:

    • In a shallow dish, mix the cornmeal, flour, paprika, garlic powder, cayenne (if using), salt, and pepper. Remove the catfish from the buttermilk, letting the excess drip off, and dredge each fillet in the cornmeal mixture.

  4. Fry the Catfish:

    • Heat about an inch of vegetable oil in a skillet over medium heat. Fry the fillets for 3-4 minutes per side, or until golden brown and crispy. Drain on paper towels.

  5. Serve:

    • Plate the crispy fried catfish alongside a generous helping of slaw. Garnish with lemon wedges and serve with hot sauce for an authentic Southern experience.
