West Texas Green Chile Stew
Ingredients:
1 ½ lbs pork shoulder, cubed
2 tbsp vegetable oil
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 ½ cups roasted Hatch green chiles, chopped
2 medium potatoes, diced
1 tsp cumin
1 tsp oregano
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional for extra heat)
1 tbsp lime juice
Fresh cilantro and warm flour tortillas for serving
Instructions:
Brown the Pork: In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Add cubed pork and sear until browned on all sides. Remove and set aside.
Sauté the Aromatics: In the same pot, add onions and garlic, cooking until fragrant and softened.
Build the Stew: Return the pork to the pot and add chicken broth, tomatoes, green chiles, potatoes, cumin, oregano, salt, black pepper, and red pepper flakes. Stir well.
Simmer to Perfection: Cover and let simmer for 1 to 1 ½ hours, or until the pork is tender and the potatoes are cooked through.
Finish & Serve: Stir in lime juice, garnish with fresh cilantro, and serve with warm flour tortillas.
