In West Texas, we know how to turn up the heat—and not just in the kitchen. Our homes are built for bold flavor, big gatherings, and front-porch comfort. This spicy smoked pork fried rice brings savory smoke, a punch of spice, and a hint of sweetness in every bite. It’s the perfect fusion of comfort food and backyard BBQ spirit—just like a great West Texas home.


🍽️ Spicy Smoked Pork Fried Rice (Oak Wood & Coal-Grilled)


Ingredients (Serves 6-8):

For the Pork:


  • 1 lb smoked pulled pork (leftovers or fresh)

  • 1 tbsp soy sauce

  • 1 tbsp brown sugar

  • 1 tsp chili powder


For the Rice:


  • 4 cups cooked and chilled white rice (preferably day-old)

  • 2 tbsp vegetable oil or bacon grease

  • 4 cloves garlic, minced

  • 1 medium onion, diced

  • 1 cup diced bell peppers (any color)

  • 1 jalapeño, minced (optional for extra heat)

  • 3 eggs, beaten

  • 3 green onions, sliced

  • 1/4 cup soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp sriracha or hot sauce

  • Salt & pepper to taste


Instructions:


  1. Flavor the Pork: Toss smoked pork in soy sauce, brown sugar, and chili powder. Set aside while prepping the rice.

  2. Fire Up the Grill: Set up a round charcoal grill with oak wood chunks or chips for added smoke flavor. Let the coals burn until white-hot with a medium heat zone.

  3. Heat Things Up: Place a cast iron skillet directly over the coals. Add oil and let it heat. Then sauté onion, garlic, and peppers until softened.

  4. Stir in Pork: Add the seasoned smoked pork and cook for 2-3 minutes, letting the edges crisp slightly in the cast iron.

  5. Cook the Eggs: Push everything to one side of the skillet. Pour in beaten eggs, scramble, then mix into the rest of the ingredients.

  6. Add the Rice: Stir in cold rice and break up clumps. Add soy sauce, sesame oil, sriracha, salt, and pepper. Cook until hot, slightly crispy, and kissed by the oak smoke.

  7. Finish & Serve: Garnish with green onions. Serve hot as a bold side dish or hearty main. Perfect for summer nights and smoky backyard gatherings.
